Food Spotlight: Chicken Sopas

Our amazing chicken sopas ramen is based on a Filipino comfort food classic, often associated with warm memories of family and home-cooked meals.

We’re putting the focus today on another one of our most popular menu items: the chicken sopas ramen bowl. As its name implies, this dish is based on Filipino chicken sopas, which is a classic staple within the culture’s comfort food world. It’s a soup that’s filled with diced or shredded boneless chicken meat and elbow macaroni noodles, and is frequently served as a breakfast or snack food among Filipino families. As one might expect, it’s particularly popular during the rainy season. For many, it conjures up fond memories of communal family meals, coziness, and warmth.

Ramo’s chicken sopas aims to deliver the exact same hit of nostalgia and good vibes to all of our customers. Our spin on it? A creamy chicken broth topped with crispy chicharonnes (fried chicken skin), pulled adobo chicken, niitamago (egg), pea shoots, menma (bamboo shoots), spring onions, shiitake mushrooms, and nori (seaweed). We swap out the macaroni noodles for perfectly crafted ramen noodles. Like the original, our soup here is made with nothing but love and care. To wit: we cook the stock for 16 hours, resulting in intensely chicken-y flavours. It’s also one of our most beloved dishes! Just check out this glowing review of it from the blog “You Had Me at Food”:

“Chicken sopas is a classic creamy Filipino dish usually made on the days when our mothers would like to warm us up, so it comes from the heart and this dish captures that…To our surprise, Ramo Ramen managed to translate the classic dish into a ramen dish, and very successfully may I add. It had the creaminess and the taste that the classic had, as well as the important succulent and tender chicken to go with the soup.”
