The reputation of Wagyu (Wa•Gyoo) doesn’t come from nowhere either. In today’s culinary industry, Wagyu has been some of the most sought after meats. This is in main part due the high marbling content resulting in the most buttery steak you will ever have the pleasure of tasting. We also use the flat iron cut of the steak, known for being incredibly tender to create that melt in your mouth experience.
WHAT IS BISTEK?
The combination of the word Beef and Steak, Bistek (Bis•teck) involves thinly slicing beef in a mixture of soy sauce, garlic, onions, and citrus juice. While more commonly used from the Filipino lime called the Calamansi, we use Yuzu to incorporate more Japanese flavours. This results in an extremely aromatic and tender beef with a beautiful balance of sweet, savoury and tangy flavours.
